I know that a lot of people state that their pancakes are “the best” but I can tell you for a fact that these fluffy pancakes are “simply the best” hands down! This is one of my favorite recipes as it contains ingredients that I always have on hand and it only takes a few minutes to make.
Perfect for a cold Sunday morning with a good cup of coffee
I have a nephew from Texas that every time he visits, he demands these homemade pancakes as breakfast and dinner! My kids say that they cannot order pancakes anywhere after trying these, and who could blame them, right?
I have been perfecting this pancake recipe for a while now, and I have to say that I nailed it!
Of course, anyone that knows me, knows that it is hard for me to wake up in the morning. So I combine all the dry ingredients (flour, salt, sugar, baking powder) in a container in advance and I just combine with the milk and egg mixture in the morning when I am ready to cook the pancakes.
Sometimes, I add a dash of cinnamon or a few frozen blueberries in the batter, and I have to say that they are heavenly either way!
This recipe makes 10 perfect homemade fluffy pancakes every time !
Just make sure that you allow the pan to heat up well while you are preparing the batter. Don’t rush your pancakes… Let that first side get golden brown before you flip them over with a spatula. You will know when they are ready to be flipper, when bubbles start to form and pop on top of the pancake.
The best ever homemade pancakes
- 1 1/2 cups all purpose flour
- 3 1/2 tsp baking powder
- 1/2 tsp salt
- 1/4 cup sugar
- 1 1/2 cups whole milk
- 1 egg
- 1 vanilla
- 3 tbsp butter
Melt the butter in microwave and set aside.
In a medium bowl, mix together the flour, sugar, salt, baking powder and vanilla.
Stir the milk and egg together.
Pour the butter and milk mixture into the bowl with the flour.
Use a wire whisk to stir everything together till it is just incorporated. It might be lumpy but don't overmix.
Allow the batter to rest for a couple of minutes and in the meantime heat a lightly oiled pan in medium heat.
Use a 1/4 cup scoop for each pancake, and with it , scoop the batter onto the heated pan.
Cook each side for 3-5 minutes, until they are golden brown
- You may use low fat milk, instead of whole.
- You will know that each pancake is ready to be flipped over, when bubbles start to form and pop on top of the pancake.
- Always spray the pan with non stick spray or melt a little bit of butter, to prevent them from sticking on the pan.
- Add the amount of vanilla you wish. I usually add 1 teaspoon.
Each serving has been calculated as 2 pancakes per person, but these fluffy homemade pancakes are so delicious, that you won’t be able to resist more!
