They are made with just 4 simple ingredients that more or less we all have in our pantry or if you don’t they can be found at any grocery stores. Bananas, rolled oats, almond flour and chocolate chips!
Every Monday John starts his diet… Every Sunday he makes those cookies so he can have them for when he is running around at work. It seems like John’s diet gets derailed every week by the time Wednesday rolls in but these oat and almond cookies with chocolate chips are very tasty and so good for you that I end up stealing the rest out of the cookie jar.
If you ever have 4 overripe bananas and no time to make a banana bread, these cookies are the perfect match! Did you know that scientists have discovered that overripe bananas are one of the best foods due to cancer fighting antioxidants that develop as the bananas ripen ? It is one of these weird things that the riper a banana gets, the better it is for you!
In addition there is almond flour which is full of good fat and it contains no gluten. Another star of this recipe is the rolled oats. In Greece they are not too popular as they have the reputation of being tasteless but oats are chameleons. They adapt to the surrounding foods and absorb the flavors that they are surrounded by. They are full of fiber that helps with digestion and also helps with keeping you full longer.As a result, you don’t feel that you are hungry all the time and you cut down on unnecessary snacking.Then a little bit of chocolate chips go a long way as they are full of flavor and antioxidants.

Gluten free Oat cookies with almond flour and chocolate chips.
- 4 large bananas overripe
- 2 cups rolled oats
- 1/2 cup almond flour
- 1/2 cup chocolate chips
Preheat the oven at 375 degrees Fahrenheit. Line a cookie sheet with parchment paper and set aside.
Peel the bananas and place them in a bowl. Mash them well with a fork.
Add the oats, the almond flour and the chocolate chips and mix well.
Make 12 cookies that are 1 cm thick and place them 1 cm apart on the cookie sheet. Bake at 375 for 17 minutes
As you can see these are probably not your typical cookies. They are a mix between cookies and a nutrition bar. If you have kids that are doing sports or you need that perfect breakfast on the go, you need to give this cookie recipe a try as they contain protein, complex carbohydrates and plenty of fiber without adding any sugar!
